Four Pillars is an Australian gin distillery located in the famous wine region – the Yarra Valley (an hour outside of Melbourne).
Four Pillars launched in 2013 and since then has gone on to become Australia’s number 1 craft spirit, available in over 25 markets around the world.

TASTING NOTES
After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. This gin is savoury, textural and bright. Perfect for any Martini – Gibson, dirty, or dry with a twist. For a\ longer drink try it in a Spanish-inspired gintonic, with rosemary and lemon!

 

GINTONIC INGREDIENTS
45ml Four Pillars Olive Leaf Gin
120mL Tonic
Fresh Lemon
Fresh Rosemary
METHOD
Serve in a large glass with layers of lemon and rosemary and plenty of ice.

MARTINI INGREDIENTS
60ml Four Pillars Olive Leaf Gin
20ml Dry Vermouth
Cobram Estate Picual EVOO
Sicilian Olives
METHOD
Stir down gin and vermouth until desired dilution. Strain into frozen cocktail glass and garnish with 4 drops of EVOO, an expression of lemon oils and a side dish of Sicilian olives and lemon peel.
