New Zealand is paradise for pinot gris and this drop captures all the things that make gris from here so special. A fresh, clean perfume of honeysuckle and pear, lychee and orange rind is just the beginning. Quince and pear flavours, white stone-fruits, musk, spice and beeswax notes intermingle with gentle, textural richness at the end. It’s refreshingly dry and satisfyingly long. A lovely drink on it’s own, or enjoy it with friends alongside your favourite Asian dishes.
VinificationFruit was machine harvested, pressed and cold settled before cool fermentation in stainless steel vessels. Batches were inoculated with a mixture of yeast strains - some to accentuate aromatics, others that lend themselves to more textural elements. Following fermentation 20% of this wine was aged in seasoned French oak puncheons. The wine sat on heavy lees until blending in early January 2014.
